If evolution is true, shouldn't we be seeing at least one animal turning into a different animal by now?

Evolutionists like to claim this process happen over thousands of years, but why haven't we observed at least one animal out of thousands evolve into a different animal in the past 5000 years?

Did all animals evolved at the same point or something?

Whenever someone bring this up against them, they never have an answer.
