lots of cars and trucks can be hard to restart if you stall them its asking for trouble stalling the engine instead of turning it off with the key . If the road is flat and you let the clutch out easierly most cars and trucks will coast off the line with very little if any throttle.

Every manual transmission vehicle will stall if you let the clutch pedal up with out giving the motor more gas to compensate for the load on the motor.

All cars, with some exceptions, will stall if you release the clutch without applying gas. There are some exceptions. Notably diesel cars. A diesel car has much more torque on tick over. Both my diesel cars will pull away on tick over if I release the clutch gently. This makes driving in heavy stop start traffic easier and relaxing.

If it is diesel powered then there is a good chance that it will not "Stall" in that condition. Most petro cars will unless the clutch is let out very slowly. The larger the engine and the less loaded the car is the more chance you will have of not stalling it when doing that.
