Do you need to play the story/missions in GTA 5 to unlock more?

So I just got gta 5 for Xbox one. I haven't played the story missions because i Just like driving the cars and looking a the cool graphics and exploring! But I realized that there's no clothing stores or food stores or any buildings I can go in. I'd really like to change the characters outfit (im a girl so, thats what I do!). So do more things get unlocked as you play the real missions? How many missions do you have to do to unlock everything? Thanks

Yes, the more you play through the main story the more you'll unlock - vehicles, aircraft, clothing, weapons etc. (though there are no food stores like Cluckin' Bell etc. from previous games - there are however convenience stores where you can buy snacks etc.).

You pretty much have to beat the main story to unlock everything, though side missions & activities such as random encounters, races etc. will also unlock stuff.
